Easy Quiche!

Confession – I love quiche!!

Another Confession – I hate making pastry dough.

Solution – Buy frozen pie crusts!

Bacon Tomato Quiche

1 9 inch frozen pie crust

6 slices bacon

1 small onion, chopped

2 large tomatoes, diced (or a small can of diced tomatoes, drained)

1 cup heavy cream

3 eggs

1 cup of shredded swiss cheese (you can use cheddar or any cheese you like)

2 tbsp parmesan cheese

salt & pepper to taste

Pre-heat oven to 350.  Prick pie crust with fork.  Bake unfilled pie crust for 10 minutes.

Cook bacon in frying pan, remove bacon from pan when cooked.  Chop bacon. Add onion to pan and cook in bacon fat until soft.  Remove onions from pan and let cool a bit

In a bowl, mix together cream, eggs, tomatoes, cheeses and salt & pepper.  Add onions and bacon.

Add mixture to pie crust and put on cookie sheet.  Bake for 45 minutes or until cooked through.  Let cool for 15 minutes!  Serve and enjoy!
