Drenched Apple Cake

Yesterday, we did what every family with small children does in the NorthEast every September – We went apple picking.  What this means with small children is that the parents lift 50 lb children higher than our heads to pick questionably ripe fruit off of apple trees and then pay the farm for the privilege!

Our 5 year old wanted enough apples to make an apple pie.  He decided 16 was the magic number.  Our 7 year old just picked apples until she couldn’t lift the bag anymore.  We also picked extra apples so that the kids would have something to eat in case the apples they picked were a little unripe!

We brought them home and left them on the kitchen counter.  I woke up this morning realizing that I needed a plan to use these or our little friends the fruit flies would be visiting our abode!

Luckily, one of the posts in my Google Reader was this one from Bakerella – so I set out to make this today!  Instead of a 13 x 9 cake, I decided to make 2 8 x 8’s and double the recipe so I ended up with 4 cakes. They still took the entire 45 minutes to bake.  For the topping, although I used two full recipes of the cake, I only used 1.5 recipes of the topping and had plenty of topping.  The cake is totally drenched.

As soon as they were finished, I wrapped two up and delivered one to my neighbor and one to the bus driver when she dropped the kids off.  It was so good that it needed to leave my house immediately.  The kids each got a piece with a glass of milk as an afternoon snack and they LOVED it!  I would definitely make it again and it is a great cake to gift!
