Caramel Apple Pie

I am not a pie fan in general.  I usually go for the crumb topped pies or maybe a piece of pumpkin, but I don’t really reach for the pie as my favorite dessert.

As I have said before, I am not a fan of making pastry dough.  So I cheated and used the Pillsbury Pie Crust for this recipe!

When we had gone apple picking last weekend, B had been very clear that he wanted to make apple pie with his apples, so last night, we made it happen!

Pie Crust (you need 2 9 inch pie crusts)

4 large apples, peeled and sliced (Granny Smith are perfect, but use what you have!)

1 stick of butter

1/2 cup of brown sugar

1/2 cup of sugar

1 tsp vanilla

1/4 tsp cinnamon

1/4 tsp nutmeg

Preheat Oven to 425 degrees.

Arrange sliced apples in bottom pie crust, heaping slightly.

In saucepan, melt butter.  Add sugars, vanilla and spices and a 1/4 of water and cook for 5 minutes until thick and caramel colored.  Pour it over the apples and cover with other pie crust.  Crimp the edges of the pie crust and trim off excess!  Cut vents in the top crust.

Cook for 15 minutes at 425 and then an additional 40 minutes at 350.

Remove from oven and let cool.  Serve with apple pie and real whipped cream!
