Last Night’s Dinner

It was a nasty rainy day here, so we decided to make a comfort food night for dinner.

Nothing says comfort food to me like French Onion Soup!  And it is seriously so easy!

1/2 stick of butter

3 Large Vidalia Onions, chopped

1 bay leaf

1 1/2 tsp of dried thyme (or fresh – whatever you have on hand)

salt and pepper to taste

40 ounces of beef broth (1 qt plus a cup)

1 baguette, cut into 1 inch rounds and toasted

Swiss Cheese (either shredded or sliced)

Melt the butter in soup pot and add onions.  Saute for approximately 10 minutes until soft and starting to brown.

Add bay leaf, thyme, salt and pepper.

Add 1/2 cup of red wine and cook for a minute.  Add beef broth.  Cook for 20-25 minutes until soft and tender.

Pour into soup crocks, top with a piece of baguette toast, cover with cheese and stick in the oven or broiler for a couple of minutes to melt the cheese over the top!

We served it with our favorite quiche (bacon tomato cheese) and everyone was happy!
